Growing up in NC, poke cakes were the item to bring to pot lucks and pig pickin's. Poke cake is one of the oldest baking hacks in the books, and you won't be disappointed. I mean, cake + filling + frosting? It doesn't get any better.
So what IS a poke cake?
Like the name implies, you literally poke holes in the cake. Then you pour deliciousness into the holes you just created and top with frosting and garnish. The filling can be pudding, sweetened condensed milk, jello....your imagination is the limit.
Traditionally, poke cakes are topped with whipped cream instead of traditional cake frosting, so they're usually refrigerated until right before serving. This makes them the perfect warm weather dessert (because everyone needs a break from ice cream every once in a while).
The best part (in my opinion)? Poke cakes are a no-fuss kind of dessert--you can bake, prepare, and serve directly from your 9x13 pan!
