I hate cooking.
Which is actually quite hilarious considering how many hours I spent watching the Food Network growing up. At one point, I envisioned myself going head-to-head (er, knife-to-knife) with Cat Cora on Iron Chef.
That dream was quickly squashed as I grew older and lost my will to whip up anything in the kitchen, instead opting to use the microwave any chance I got.
Now, if I can't microwave something, I don't bother purchasing it. This is why all I consume are salads and frozen meals, specifically Amy's Kitchen vegan frozen meals.
They are quite literally the reason I'm still alive at this point, because a handful of spinach drizzled with lemon juice can only sustain me for so long.

Let me be clear that this isn't entirely authentic pad thai, but boy is it delicious. The blend of veggies, tofu, and rice noodles is a combination I never knew I needed.
Spaghetti Italiano

These meatballs are just frozen nuggets of quinoa, lentils, and tofu, but they are by far the most delicious balls I've ever put in my mouth. The spaghetti is obviously delicious, too, but it's the meatballs that make it the most memorable. If Amy's could come out with a bowl of frozen meatballs, I'd be forever indebted.

This baked ziti is quite possibly my favorite frozen meal Amy's makes. I even go so far as to lick the bowl clean once I've finished eating every last bit of the pasta dish. And I hate peas, but I love them in this combination.
Chinese Noodles & Veggies

If this dish was served at a Michelin-rated restaurant, I guarantee people would spend good money for it. But little would they know it was once frozen in a box, waiting to be plucked from the frozen food section. The creamy cashew sauce that covers the noodles and add-ons is really what sells me on it and why I continue to purchase this meal on a regular basis. Attach me to an IV filled with this sauce and I'd be a much happier person.
Indian Mattar Tofu

One of the great things about Indian food is a lot of it is already dairy-free, but as an incredibly lazy individual, going out to eat is not something I particularly enjoy. And Indian food needs to be enjoyed in an Indian restaurant, or it's just not as good. But this frozen dish has me believing otherwise.
Rice Mac & Cheeze

God, how I love mac and cheese. There's nothing diving into a creamy bowl of the cheesy pasta can't fix. Because mac and cheese traditionally takes a little while to cook (okay, so I know it doesn't take that long, but I literally do not have the patience to watch water boil), popping this in the microwave for a few quick minutes makes me enjoy it even more.
Vegetable Lasagna

Lasagna is yet another dish I don't have the time or energy to craft on my own, but thank the heavens above it comes in a microwavable and vegan version, otherwise I would never get to enjoy it... ever.
